You can also replace animations through a .sab file. There're lines you can add to the file, such as 'flourishanim' or 'gloatanim.' Then you could add a value of any other animation in JK2/3. You could view these in ModView... if I remembered how to do it myself. This method only replaces animations for your given saber, and only works if the server has the actual .sab file on it.

I am pretty certain that stances use animations, so if you want to edit them, you'll need a program that makes these kinds of animations. There is a free one for making Jedi Knight 2/3 animations here. You should be able to find the latest version on its forum which you can find at the bottom of the page. For actually replacing animations with new ones, there is a guide here.
