Does any one know of a way to convert the in-game video demos to file types such as .avi, .mpeg, or .mov, or just any type at all that I can view outside of the game system. Any help would be much appreciated. Later:D

dont think that's possible... see, the dm16 file only contains some non-viweable data. like the player's coordinates, the map etc. but the original TEXTURES and STRUCTURES or models... that's all in your JK folder.
an dm16 are no preset pictures, JK2 calculates the pictures everytime again when you watch the demo.

for example if someone records vader, and you watch the demo without vader installed, you just see defaul model (kyle). get it? :)

heh their is a way but its different from the ingame demo thinger.

Heres how it goes :

//open up the console and type

bind <KEY> cl_avidemo FPS

// fps=frames
//per second, KEY is the button you want
//to bind it to

bind KEY cl_avidemo 0 //stops the demo

//What this does is creates FPS screenshots
//per second and puts them into
//your screenshots directory. then you
//use some special program to compile
//the pictures into an AVI. Then ofcourse
//you can add music with another program.

//NOTE: This is hella slow :P
