Perhaps this is my error, but maybe not,

Ok when go to www.thejediacademy.net and don't log in but proceed to the classes listing. I look at the times for example:

Advanced Medium Stance (Standard Lightsaber)
The time says 8pm Tuesday July 5.

So next I log in to Jedi Academy and all the times for classes change. hmmmm Now the Advanced Medium Stance (Standard Lightsaber) class is listed at 12pm July 5.

Question:

Which time is right? I want to make sure I get to class on time. =)

When you're not logged in, the time zones are all displayed in UTC (GMT+0) time. When you *are* logged in, times are displayed in your local time. Therefore, the time displayed when you are logged in is the "correct" one.

When you made your profile you selected what time zone you were in, so the adjusts the time according to your profile's time zone.
