Those are called emotes, and start with em, not am.

Typ /aminfo in your console and you'll get a list of all the emotes you can use.

In JAE, the mod currently running on the Jedi Academy's servers, /aminfo shows all commands available to your access level and /amhelp displays admin commands with a small description of each.

If you are talking about another mod, go find its readme file, search on Google, or try /aminfo as in JAE. Some other mods displays their admin commands through the "aminfo" command too.

AM Commands are commands only Admins can use, and also depends on the Admin Level of the person.

There are only AM Commands available to Students, namely /aminfo and /amhelp.

If you have your own server, or you have Admin Access on a certain server, than you can use more commands, which you can find, as Bail mentioned, in the JAE Mod zip file, or as Rosered mentioned by typing /aminfo in your console when your on a server.

If you're on any of the JA's servers just type /aminfo, in console and you get a list of the available ones.

I'm of course not sure, but aren't those included in the readme for the mod?
Or in a seperate file, completely explained in use?

Anyway, note that they'll only work on your own server :)
