I do enjoy compositions by Guillaume , but Hildegard still remains my favorite. I'm rather fond of simple monophonic compositions and the melismatic vocals from early Gregorian chants.

Although i'm not too heavy on plainchant, Thomas of Celano's Dies Irae, IF it is sung with great emotional vigor (which the youtube version unfortunately is not), is an absolutely remarkable piece; it obviously can't step up to Mozart's rendition of it in his Requiem, but then again, very little can.
My favorite composer from the middle ages! Although there weren't many documented composers to begin with, sad  You should definitely look up Guaillaume de Machaut though, if you haven't already - technically still Middle Ages, albeit diverging greatly from the monophonic plainchant model in his more secular works, he became the greatest representative of the Ars Nova of the pre-renaissance era with its isorythmic compositional style. I unfortunately cannot find his excellent motet "Quant en Moy" anywhere on youtube or anywhere else, but it's something i'd recommend to anyone interested in Middle Age compositions.
